This is the season where a lot of fresh fruit and vegetables are available. And, Great Spirit is telling all of us to cut back on the meat and bread, and eat more fresh veggies and fruit.
Here two recipes that combine the best of two healthy choices, and the combinations taste very good as well!
Thai peach salad
Preparation time 15 minutes Makes 8 servings
Ingredients
- 1 tbsp ( 15 mL) brown sugar
- 1 tbsp ( 15 mL) minced or grated fresh ginger
- 1 large garlic clove, minced
- 4 tsp ( 20 mL) freshly squeezed lime juice
- 1 tsp ( 5 mL) fish sauce (I don’t use fish sauce at all!)
- 1 tsp ( 5 mL) hot chili-garlic sauce
- 1/4 tsp ( 1 mL) salt (I use sea salt)
- 2 tbsp ( 30 mL) olive oil
- 4 to 6 peaches or nectarines
- 2 sweet peppers, preferably red
- 8 cups ( 2 L) mixed salad greens, preferably mesclun mix ( I don’t use the greens at all)
- 1/2 cup ( 125 mL) fresh coriander leaves (optional) (I leave out the coriander too)
- 2 cups of diced celery (optional to use instead of salad greens)
1. In a medium-size bowl, stir sugar with ginger, garlic, lime juice, fish sauce, chili-garlic sauce and salt. Whisk in olive oil. Use right away or leave at room temperature up to half a day or refrigerate up to 3 days.
2. Just before serving, peel peaches. Halve, remove pits and thinly slice. Place in a bowl. Quarter peppers and remove seeds. Then thinly slice and add to peaches. Whisk dressing, pour over peach mixture and gently stir until coated. Toss in a large salad bowl with greens and coriander, if using. Taste and add more salt, if needed.
Apple Broccoli Salad
Prep time 30 minutes Yield 10 servings
Ingredients
- 6 medium tart apples, chopped
- 3 cups broccoli florets
- 1 small onion, chopped
- 1/2 cup raisins
- 1 1/2 cups mayonnaise
- 2 tablespoons white vinegar
- 1 1/2 teaspoons sugar
- 1/2 teaspoon lemon juice
- 1/2 teaspoon salt
- 10 bacon strips, cooked and crumbled
- 1/2 cup coarsely chopped walnuts (optional)
Directions
- In a large bowl, combine the apples, broccoli, onion and raisins. In a small bowl, combine the mayonnaise, vinegar, sugar, lemon juice and salt; pour over apple mixture and toss to coat. Cover and chill for at least 2 hours. Just before serving, stir in the bacon and walnuts.
