Remembrance Day Nov 11 2018

Today, we remember our family and friends that fell in war or in peace keeping. We remember their courage and their belief that someone must do the right thing on behalf of all those people who can not do the right thing themselves – the aged, the children, the ill, and the caregivers.  We are grateful for their willingness to step forward when many will not.

FROM JUDY’S KITCHEN ~IRISH SODA BREAD WITH ROSEMARY AND CHEESE

Our family loves soda bread.  We use this recipe because it tastes good, and it feels like it lifts our spirits. 

If you feel down, try the soda bread.

IRISH SODA BREAD WITH ROSEMARY AND CHEESE

--Makes 16 servings..

1 ½ cups of all purpose white flour

1 cup whole wheat flour

2 tablespoons of granulated sugar (I use brown sugar)

1 ½ teaspoons of baking powder

½ teaspoon of baking soda

½ teaspoon of sea salt

1/3 cup of grated cheddar cheese (for a different taste, use raisins or currents)

1 tablespoon of rosemary flakes or crushed rosemary or fresh herb rosemary as in the picture

1 egg 1 ¼ cups of buttermilk (I use regular milk with 2 tablespoons of white vinegar)

3 tablespoons of vegetable oil

In a large bowl, combine all purpose flour, whole wheat flour, sugar, baking powder, baking soda and salt. Stir together well. Stir in cheese and rosemary seeds into flour mixture.

In a separate bowl, combine egg, buttermilk and oil. Pour liquid ingredients over flour mixture and very lightly combine together into rough dough.

Place dough in 9 inch by 2 ½ inch spring form pan lined with parchment paper. Bake in preheated 350 degrees Fahrenheit oven for 50 to 55 minutes. Remove from pan and cool on rack.

Christmas Recipe–Chocolate Peanut Butter Fudge

When all your family and friends are coming home for the holidays, it is time to make this easy, delightful fudge for sharing while you stroll down memory lane.  This recipe is still a favorite in our family.

Chocolate Peanut Butter Fudge

  • 3 cups white sugar
  • 1 cup evaporated milk
  • 1/4 cup cocoa
  • 1/2 cup peanut butter
  • 1 tablespoon margarine
  • 1 tablespoon butter

Directions

  1. Butter one 9x9 inch pan.
  2. Combine the sugar, evaporated milk and cocoa in saucepan. Stir over high heat until mixture comes to a rolling boil. Lower heat to medium and continue cooking to a soft ball stage.
  3. Remove from heat, add peanut butter and margarine. Beat by hand until creamy; pour into prepared pan. Allow to cool and cut into squares.

As this is easy to make, it is a great gift for those folks who "have everything".  It is like a warm hug.

Grounded

When we are grounded, we have the feeling of being home.  Home is being at peace within yourself and within your world.  Grounding happens when you connect with the richness of the Earth. 

Grounding allows us to:

  • feel confident
  • remember that we are all elemental – made up of basic minerals and water and gases
  • be grateful that we can ground and connect
  • resonate with harmony that life is good

Angels Speak - Where Do You Call Home?

The mystery of why we live where we live is probably one of the most explored concepts that brilliant minds try to solve.  The brainiacs have offered up all sorts of theories:

  • It is because of family ties
  • It is because of friendships and not wanting to let them go
  • It is because of family roots
  • It is because people cannot afford to leave
  • It is because of lifestyle
  • It is because of a job\career
  • It is because they do not want to uproot children

All of these arguments are easy to counter. 

The Angels say that we live where we live because we know in our hearts that this is the place that we belong.
